Join us for a one-of-a-kind evening showcasing the culinary artistry and innovation of Kō – signature restaurant of Fairmont Kea Lani – and the official launch of Kōracha.

Featuring culinary creations from six of Fairmont Kea Lani’s talented chefs, each representing a different culture and cuisine, complemented by Kōracha.

“We are excited to introduce ‘Taste of Kō’ to our community and invite guests to join us on a culinary journey that celebrates the diverse flavors of Maui,” said Jonathan Pasion, Executive Sous Chef at Fairmont Kea Lani.

Chef stations will include Hawaiian, Chinese, Filipino, Portuguese, Korean and Japanese dishes, with each station offering two distinct dishes crafted with locally sourced produce, meat, and seafood. Guests will experience 12 unique dishes, paired with specialty cocktails and wines, all while enjoying live music from Maui’s own Jason Arcilla.

Kōracha made its official debut at Kō on January 12, 2024. The concept of creating a special sauce to complement the Kō menu originated with the late Chef Pang. He entrusted this idea to Executive Chef Jonathan Pasion, who, in collaboration with Justin and Katie at HiSpice, a Maui-based hot sauce brand, developed a unique flavor profile. HiSpice takes pride in sourcing 100% of its ingredients from Maui-based farmers.

Kōracha, which incorporates ingredients grown on the grounds of Fairmont Kea Lani and utilized within main dishes of the resort’s signature restaurant Kō, has a flavor profile similar to that of sriracha with lemongrass and ginger as the standout ingredients.
